At our house, we like bacon…like a lot. If we can add bacon to something, we do (see Tomato-Bacon Guacamole). For us, Spaghetti Carbonara = Bacon Spaghetti. Yeah, sometimes we get fancy and use pancetta instead of bacon but here’s a secret, I like the bacon version better. I’m high class like that 🙂

Yay, you’re going to build a house! It’s a lot of fun (if you’re dorky like me and like houses) but it’s also a lot of work. We built last year and had a really good experience. Don’t get me wrong, it’s stressful, even in the best of conditions. But, overall, nothing major went wrong and we love our new home.

This week I’m starting a 21-day challenge at the gym so I need to clean up my eating a
bit lot. This means everybody in the house suffers gets the joy of eating better and is SO happy about it. I can’t go carb free (seriously, that’s just crazy talk), but I do need to cut back on my carbs and the dinners this week reflect this. For the next 21 days I’m going to try really, really hard to not eat white carbs so no white pasta, bread, etc. Only whole grains. I won’t be perfect at it but I’m gonna try my best. Note, I’m not doing the official 21 Day Fix but there’s a lot of 21 Day Fix recipes that are low on carbs so that’s why a few of the recipes have that in the name.
In addition to the meal ideas, I’m going to try to put all the things you need for the meals on a printable grocery list each week. (more…)
This year we’re going to a St. Paddy’s Day party for the first time ever and I have absolutely no idea what to take. It’s not that we don’t like Irish food but we don’t typically eat it. So what’s a girl to do? Go to Pinterest, of course!

It’s that time of year where there’s Peeps, Peeps, everywhere there’s Peeps! I’m not a big fan of eating Peeps by themselves but put them on a graham cracker with some chocolate…yes, please! With all the pretty colors, shapes, and flavors (the blue raspberry is especially good), it’s hard to remember Peeps are actually just marshmallows. What better to do with them than make s’mores?!

While I love the Amazingly Delicious Tomato Basil Soup we make, I love love love the broccoli cheese soup my mom makes. When we’re visiting my parents and it’s anywhere under 50 degrees outside, it’s what I request for dinner. I can’t get enough of this stuff.

We love to eat and we eat a variety of foods but our favorite kind of food, hands down, is Mexican. While I’ve always loved eating Mexican food, I’d never really liked guacamole until my life was changed with this Bacon & Tomato Guacamole.
I’d love to be able to take credit for the recipe but it’s a Rick Bayless recipe and I’d like to even be able to say we added something to make it our own but it already has bacon so I’m not sure what could make it better. (more…)

I like doing crafts with Audrie (see Valentine’s Mailbox) and, lucky for me, she enjoys doing them too. Also, like me, she doesn’t like to repeat things so I’m always looking for new ideas. Here’s some fun Easter crafts I found as potential projects for this year. I’d show a picture of an Easter craft we’ve done in past years but, for the life of me, I can’t think of any of the ones we’ve done and I can’t find a single picture. This mom’s mind is slipping and I’m not great at saving pictures. I’ll do better this year (maybe, I make no promises).
The last one is for the baby to do. Love crafts that involve baby hand or foot prints. 🙂
