Hope everybody had a good Memorial Day weekend! We enjoyed the pool and time with family and friends. You really can’t ask for much more. I didn’t do a meals post last week because, well, I was working on the June Stitch Fix Review and by the time I got done with that, I was tired. But, no fear, I’m back this week with some delicious-looking meal ideas.

Hello, friends! It’s been a busy week with baby’s baptism and birthday party (did you see the smash cake?), a Royals game, Audrie’s first t-ball game, and a trip to urgent care with baby who’s been not feeling well and just wasn’t getting better. I’m happy to report we’ve all survived and baby is in much better spirits tonight.
The week started strong with us cooking two nights in a row. With the craziness we didn’t end very well but what we did make was VERY good. Monday night I made the Texas Ranch Chicken Casserole from last week. Not gonna lie, (more…)
We’re prepping for a BIG weekend at our house! It’s the weekend we celebrate baby’s baptism and his 1st birthday. Lots going on! Family’s coming to town to celebrate the birthday so we figured we’d do the baptism the same day since everybody’s going to be here already. Exciting stuff!

This week wasn’t quite as nuts but, wow, I feel like we should have a small party to celebrate the survival of each week. And by ‘celebration,’ I mean uninterrupted sleep 🙂 We’ve started t-ball practice but games don’t start for another few weeks so we have a little lull until that happens. We’re still managing to find plenty to do, as you can imagine, but hopefully we’ll have more time to try out these meals this week.

When this is posted, I’ll be livin’ it up at the school carnival. No, no, don’t be jealous. Not everybody can spend their Friday night at an elementary school carnival, just cool people like me 🙂 On a serious note, by the time you see this, the carnival will be almost over and I’ll be a happy mamma.

You know those weeks when you try to cram too much in? Yeah, this is one of those. I was tired before the week really even got started just thinking about the craziness. Although I don’t think things will slow down anytime soon, it’s all good. T-ball starts next week which I’ve very much been looking forward to. Audrie was super excited to get her cleats and glove and has been wanting to practice which is a pleasant surprise for this mamma.
Still not back at the gym but I do seem to be making progress with physical therapy. Although when (more…)
Even without going to the gym this week, I stayed mostly on track with my eating and for this reason, I still feel good. I ate a lot on Easter and felt awful at the end of the day but everything was so delicious and it was totally worth it. Even thought I’m at the end of my 3 week challenge, I’m going to try keep limiting my white carbs. It’s really not difficult to do.
Not gonna lie, I’m really bummed to not be able to finish the 21-day competition at the gym. I gotta get this back thing figured out before I can work out again. The flare-ups (more…)
I’m still on track with my eating (for the most part) but a back issue this week has taken me out of the gym for awhile (duration TBD). It’s frustrating and annoying. Historically, I don’t eat well when I’m not working out but I’m trying hard to keep the diet pretty clean for at least another week. I’ll be cheating big time on Easter, I’m sure but, as I’ve said before, I’m not perfect (hence, the name of the blog).
We’ve made the Ranch Chicken Skillet from last week’s Quick & Easy Weeknight Meals and it was tasty. I’ll (more…)
