Some days you have grand goals. Last Sunday was not one of those days. Don’t get me wrong, we got a lot done around the house (being home on a Sunday is rare, we have to take advantage) but my biggest goal was to cook dinner. We’d eaten out so. very. much. the week before and I was over it. I’d had some chicken thawed in the fridge that needed to be used and I didn’t want to make anything labor-intensive so these chicken philly cheesesteak sandwiches fit the bill.

Who doesn’t like a good sloppy joe? They’re simple to make and are typically a big hit with everybody at the table. If you eat sloppy joe’s out of a can, please don’t eat that ever, ever again. This recipe is so incredibly easy to make and 10x’s better than the can. Trust me, these sloppy joe’s won’t leave you disappointed.

You know how people always say homemade is better than store-bought? I wish this weren’t true but it really is. Do we always make fresh homemade spaghetti sauce? Um, no. But, when we have a few extra minutes, this homemade marinara is definitely worth the effort. And, added bonus when we have our own fresh basil to use!

Last week I made some chocolate cupcakes with Oreo buttercream frosting and after making those, the candy-cupcake wheels were churning in my brain. I’ve done Reese’s cupcakes and they’re delicious, of course, but I wanted to try something new. I finally settled on Snickers. I’m not a big fan of plain caramel but add some salt to it and I’m all over it! Alas, Snickers Cupcakes with Salted Caramel Frosting were born!

You know that side dish you always make because it’s just so dang delicious and it makes too much for you to eat by yourself? Well, this pasta salad is that dish for me. I got this recipe from a friend years ago and it’s my go-to pasta salad. My family and friends probably get tired of me bringing this pasta salad to everything but I just can’t resist.

Mango margarita? Yes, please! Mango salsa? Can’t get enough of it! While I enjoy mangos, I’ve never attempted to cut one, much less made anything with a mango. They’re odd shaped, a weird color, and I had no clue what was in the middle. Today, however, I went out on a limb. I got a little crazy and…drumroll please…cut a mango. Nuts, right?!

I’m back! We were on vacay last week and it was great but this week we were forced back into reality. I’ve almost fully recovered from the exhaustion that goes with vacationing with children. It’s not relaxing, it’s work but I’ll take work in Jamaica over normal work any day. Today I’m sharing a new dish to our dinner rotation, Taco-chiladas.

Hope everybody had a good Memorial Day weekend! We enjoyed the pool and time with family and friends. You really can’t ask for much more. I didn’t do a meals post last week because, well, I was working on the June Stitch Fix Review and by the time I got done with that, I was tired. Hello, friends! It’s been a busy week with baby’s baptism and birthday party (did you see the smash cake?), a Royals game, Audrie’s first t-ball game, and a trip to urgent care with baby who’s been not feeling well and just wasn’t getting better. I’m happy to report we’ve all survived and baby is in much better spirits tonight.
