Bacon & Tomato Guacamole

We love to eat and we eat a variety of foods but our favorite kind of food, hands down, is Mexican. While I’ve always loved eating Mexican food, I’d never really liked guacamole until my life was changed with this Bacon & Tomato Guacamole.

I like doing crafts with Audrie (see Valentine’s Mailbox) and, lucky for me, she enjoys doing them too. Also, like me, she doesn’t like to repeat things so I’m always looking for new ideas. Here’s some fun Easter crafts I found as potential projects for this year. I’d show a picture of an Easter craft we’ve done in past years but, for the life of me, I can’t think of any of the ones we’ve done and I can’t find a single picture. This mom’s mind is slipping and I’m not great at saving pictures. I’ll do better this year (maybe, I make no promises).

The last one is for the baby to do. Love crafts that involve baby hand or foot prints. 🙂

Amazingly Delicious and Easy Tomato Basil Soup

Not sure about you but we really like to eat soup and one of our favorite soups is tomato basil. mmmmmmm…..tomato basil soup with grilled cheese…there’s not much better. I never really liked tomato soup until the hubby introduced me to this recipe. Now I’m hooked.

Not even joking, this is a dinner that can easily be done on a weeknight, even with kids tugging at your legs. And if the kids won’t leave you alone, just recruit them to help. Audrie likes to pretend she’s on Master Chef. Turn anything into a competition and you’ve got this girl’s attention. Hmmmm…wonder where she gets that… (more…)

Quick & Easy Weeknight Meals

*Update – We made the chicken tetrazzini and it was really, really delicious and we will be making it again. However, it did take some time so I’m not sure it’s a good after work, weeknight meal. It could, however, easily be made the night before and then popped in the oven for dinner the next night.

Last week I gave you 3 quick and easy dinners for busy weeknights and this week I’m giving you 3 more. Of the meals I shared last week, the Crockpot Ham and One Pot Pepperoni Pasta were hits. We haven’t made the Cream of Cauliflower Soup but it’s still on the agenda.

One of my favorite Tuna Helper meals was always chicken tetrazzini. Growing up I couldn’t get enough of that stuff. As the husband won’t eat fish, I’m hoping this Chicken Tetrazzini from lil’ luna will be just as good as the boxed stuff I remember from my childhood. (more…)

Fitness Motivation

As I write this, my legs are shaky and I can barely lift my arms. I’m just home from my first real trip to the gym in about 8 weeks. In January I did something horrible to my back so for 6 of those weeks, I had a legitimate reason not to go. The past 2 weeks, however, I’ve just been lazy. Today was hard. A simple 30 second wall sit that in December would’ve been so easy today left my legs burning. (more…)

I love getting creative with baking but, like meals, baking projects have to be easy. Preferably the sweets will look and taste like I spent all day in the kitchen working but, in reality, I want to spend as little time as possible.

When Would Your Co-Workers Notice You Weren’t There?

Did you see this recent story about a man in Spain who didn’t show up for work for 6 years and kept getting paid? Yes, you read correctly, SIX YEARS. He was only discovered when they went to recognize him for his 20 years of loyal service.

He claims he stopped going to work because of bullying and there was no work to do (obviously, since nobody missed him doing his job). He didn’t report these issues because he was afraid of losing his job (ummmmm but not showing up is a sure way to keep your job…got it).

Quick and Easy Meals

For those of you that know us, it won’t come as a surprise that we usually plan at least some of our meals for the week. We’re planners. We make lists. It makes us happy to mark things off a list. At some point I’ll share with you our list of lists we share. It’s a little out of control but it works for us.

Life is busy. There’s work and sports and activities and school. I could go on and on. One thing that helps us get through the week a little easier is meal planning. We don’t do this every week and, when we do, we don’t plan meals for every night. We plan enough and fill in with leftovers, peanut butter sandwiches, cereal, and the occasional dinner out. We don’t always eat everything we plan. Some things may get pushed to next week or never get made at all.

The majority of our meal ideas come from Pinterest. Seriously, how did anybody eat before Pinterest????? I, myself, was withering away until Pinterest came along and saved me from starvation. Ok, that might be an exaggeration but, really, Pinterest makes cooking soooooo much easier.

On the weeks we plan our meal(s), whether we plan one or five, I’ll share it with you. If you’re looking for gourmet food that takes hours to prepare, this isn’t going to be helpful for you. We like one-pot recipes, crock-pot meals, and things that don’t require a $7 bottle of a spice that will rot in the back of the cabinet. (more…)

Crayon Heart Valentines

Seriously, how is it I’ve never melted crayons into shapes before???? Audrie was soooooooo excited about this and it was really, really easy. Not joking, really easy.

After the fun of making the Mailbox Valentine’s Box, making these crayon valentines was a breeze. We looked for valentines at the store but the stock was pretty picked over. She can’t take any kind of food or candy, so that limits the options. We hit Pinterest and found these crayon heart-shaped valentines from The Nerd’s Wife.

Short list of supplies for this project:

  1. Silicone mold of your choice
  2. Crayons
  3. Card stock
  4. Glue gun or some other type of adhesive
