I’m back! We were on vacay last week and it was great but this week we were forced back into reality. I’ve almost fully recovered from the exhaustion that goes with vacationing with children. It’s not relaxing, it’s work but I’ll take work in Jamaica over normal work any day. Today I’m sharing a new dish to our dinner rotation, Taco-chiladas.

Hope everybody had a good Memorial Day weekend! We enjoyed the pool and time with family and friends. You really can’t ask for much more. I didn’t do a meals post last week because, well, I was working on the June Stitch Fix Review and by the time I got done with that, I was tired. But, no fear, I’m back this week with some delicious-looking meal ideas.

It’s taken me awhile to get this post together but I’m finally doing it. One reason might’ve been because I really wasn’t that excited about 2 of the shirts in this month’s box. Did you see the unboxing video? Yeah, I was at a loss for anything to say about them and, for that reason, I just wasn’t dying to try everything on. But…I got over that.
On another note, have you made it to the pool this weekend? We went today (got to wear a new suit, yay!) and it was glorious. The sunshine and water, 2 of my favorite things. Baby wasn’t sure about it at first (more…)
I need to preface this post by saying I’m not overly self-conscious in a swimsuit. I’m proud of my body and what it’s done and I feel strong which, to me, is what’s important. Having said that, no matter your size or shape, I don’t know many people who enjoy swimsuit shopping. Especially when you’re doing it in the spring, at a time your body hasn’t seen the sun in 8 months and you’ve spent the last 6 months eating comfort food. It’s a cruel, cruel thing to subject yourself to.
Nevertheless, today was the day I had to look for a new swimsuit. I’ve put it off for weeks (er..years) but it could be delayed (more…)
It’s Stitch Fix unboxing day! Not gonna lie, doing the unboxing video is nerve-wracking. I have to get it right the first time because showing you the unboxing after messing up an unboxing really doesn’t work 🙂 On top of that, I have Audrie staring at me the entire time. That kid loves YouTube videos of people playing with toys (seriously, that’s a thing) so she’s amazed that mom’s putting videos on YouTube. Some day she’ll realize mom’s not that impressive but for now I’ll just let her keep thinking I’m cool.
Audrie wanted me to mention in the video that she had her last day of Kindergarten this week. That didn’t really fit well with the unboxing so I’ll mention it on here instead. I have a 1st grader on my hands, it’s insane she’s that old.

Hello, friends! It’s been a busy week with baby’s baptism and birthday party (did you see the smash cake?), a Royals game, Audrie’s first t-ball game, and a trip to urgent care with baby who’s been not feeling well and just wasn’t getting better. I’m happy to report we’ve all survived and baby is in much better spirits tonight.
The week started strong with us cooking two nights in a row. With the craziness we didn’t end very well but what we did make was VERY good. Monday night I made the Texas Ranch Chicken Casserole from last week. Not gonna lie, (more…)
It’s here, the dreaded day. My baby is growing up so quickly and his mom doesn’t like it. It makes me sad. Like I’m tearing up thinking about it right now kinda sad. I know, he’s growing into a smart and handsome little man. But he’s still my baby and moms don’t like when their babies grow. One positive thing about birthdays though, it gives me an excuse to make a cake. Every now and then I get the cake bug and want to make something and a baby smash cake is the perfect project for me, the not-so-great baker/cake decorator.
I mentioned how much I admire I Am Baker in a post last week. Again tonight, Audrie and I sat memorized on the couch watching some of her videos on Facebook. She makes everything look so simple! I daydream often (more…)
We’re prepping for a BIG weekend at our house! It’s the weekend we celebrate baby’s baptism and his 1st birthday. Lots going on! Family’s coming to town to celebrate the birthday so we figured we’d do the baptism the same day since everybody’s going to be here already. Exciting stuff!
Two big things on my to-do list before Sunday…get baby’s smash cake made/decorated and make his birthday tie. For the smash cake, I’ve been stalking I am Baker for ideas on piping designs. If you haven’t checked out her site, (more…)
I’ve never made traditional lasagna. I know it probably isn’t but it just looks like a lot of work. I like eating a good lasagna as much as the next person, just please don’t ask me to make it. I’m sure I’ll break down at some point but, for now, I’m sticking with lasagna-like dinners that are made in the skillet. I prefer mixing over layering. This dish is a twist on the traditional lasagna and is definitely one we’ll be making again very soon.
A couple weeks ago we tried this Skillet Lasagna I featured in Quick & Easy Weeknight Meals #10. It was good and very simple but there was just something about it that just wasn’t quite right. It very possibly could’ve been the kind of cheese ravioli (more…)
